The Bulgarian rachenitsa, the best-known aksak dance: seven eighths grouped 2+2+3, felt as three beats, quick-quick-slow. The tapan (big drum) booms on each beat — the beater on the head — and the switch fills the eighths between; the bass walks the same three beats and the accordion answers on the afterbeat. Listen for the long third beat: it is not a mistake or a hiccup, it is where the dance step lands and hangs. Tempos run from a stately 120 to dazzling wedding-band speeds well past 200. Practice: clap 1-2, 1-2, 1-2-3 along with the drum before you try to count seven.
